Potassium hydrogen tartrate is the acid salt of tartric acid. It is usually a colorless to white orthorhombic crystalline powder. Its solubility in water varies with temperature. It is insoluble in ethanol and acetic acid and is easily soluble in inorganic acids. It is a by-product during wine making and is called tartar powder in the food industry. It is used as an additive, leavening agent, and also as a reducing agent and buffer reagent.
