Phylase is generally a glycosylated protein, and its relative molecular mass varies depending on the source strain and the degree of glycosylation. The pH range that microorganism-derived phylase can tolerate is generally 2.5 to 6.0, and the optimal reaction temperature is 45 to 60℃. Some products can tolerate temperatures as high as 80℃.
