Capsaicin is a natural compound extracted from chili peppers and is one of the main chemical components responsible for the spiciness of chili peppers. It can also be obtained as similar plate-like solid crystals from petroleum ether. The melting point is 65°C. The purified substance is a white crystal and belongs to the amide of phenolic derivatives. It is hydrolyzed into decenoic acid limonene, showing an acidic reaction. It is insoluble in cold water but readily soluble in ethanol, ether, benzene, chloroform; and slightly soluble in dichlorosulfide. It has a strong tear-inducing and sneeze-inducing effect. The minimum irritation concentration is 1×10-3 milligrams per cubic meter. It can be made into a solution and filled in police and personal defense spray devices for use.
