Eugenolase is an enzyme that can hydrolyze eugenol to generate eugenolide, thereby achieving the purpose of de-sweetening. Among the enzymes used in de-sweetening processes, eugenolase is the one that has been studied the most. It can act on the flavanone glycoside compounds such as hesperidin in citrus peels to de-sweeten the juice. Eugenolase mainly contains two types of enzymes. One is rhamnosidase, which can break down the bitter eugenol (eugenol-7-menthol glycoside) into rhamnose and the less bitter eugenolide-7-glucose. Eugenolase is an inducible enzyme. The other is beta-glucosidase, which can hydrolyze eugenolide-7-glucose into eugenolide and glucose. Eugenolase is applied in the food industry for de-sweetening the juices, peels, and skins of citrus fruits and bitter oranges.
