Guaiacol CAS 90-05-1

Guaiacol (named after the guaiac tree native to Latin America) is a natural organic compound with the molecular formula C6H4(OH)(OCH3). This colorless, aromatic, oily compound is the main component of creosote and can be obtained from guaiac resin, pine oil, etc. Common guaiacol appears dark when exposed to air or light. Guaiacol is also present in the smoke produced when firewood is burned due to the decomposition of lignin. Many foods have a distinctive aroma due to guaiacol, such as roasted coffee beans. The special flavor of smoked foods is mainly attributed to the interaction between guaiacol and syringol. Guaiacol turns blue upon contact with ferric chloride.
