Glycyrrhizic acid is a pale yellow powder with a sweet, slightly bitter taste, containing 6%–14% glycyrrhizic acid. Pure glycyrrhizic acid is a crystalline powder with an extremely sweet taste, 200–250 times sweeter than sucrose, and the sweetness lingers for a long time. Its melting point is 212–217℃. It is readily soluble in hot water, insoluble in ether, and sparingly soluble in propylene glycol and ethanol. It is stable to heat, alkalis, and salts; precipitation will occur in the solution at pH 5.4 or below 3. The oral LD50 in mice is greater than 10 g/kg. The ADI (Advanced Individual Intake) is determined by delay (FAO/WHO, 1994).
