Garlic oil is a pale yellow liquid with a strong garlic odor. It is insoluble in water but partially soluble in ethanol. Garlic oil is obtained by steam distillation of the bulbs of the garlic plant (Allium sativum L.), a member of the lily family. Garlic oil is a broad-spectrum antibacterial substance with various pharmacological functions, including activating cells, promoting energy production, increasing antibacterial and antiviral capabilities, accelerating metabolism, and relieving fatigue. Therefore, it has wide applications in many fields. It is soluble in most non-volatile oils and mineral oils, incompletely soluble in ethanol, and insoluble in glycerol and propylene glycol.
