| Epigallocatechine is an organic compound with the chemical formula C15H14O7 and CAS number 970-74-1. It is a white powder and a polyphenol compound, its English name being (-)-Epigallocatechin (EGC). It naturally occurs in the dried leaves of the tea plant (Camellia sinensis), and is the richest source of flavonoids and physiologically active substances in green tea extracts. Its density is approximately 1.7 g/cm³, its boiling point is approximately 685.6 °C, and its melting point is 208-210 °C. Epigallocatechine can bind to unfolded polypeptides and prevent their conversion into amyloid fibrils. It is used for content identification/determination and pharmacological activity screening. | |||||||||
