| Chlorophyll copper sodium salt is a natural food coloring agent. It is obtained by replacing magnesium ions in plant chlorophyll with copper ions. Dark green powder with metallic luster, extracted from silkworm sand bells, odorless or slightly odorless. Easy to dissolve in water, insoluble in oil. The aqueous solution is blue-green, transparent, and free of precipitation. Acidity will cause precipitation. Slightly soluble in ethanol. It has stronger light resistance than chlorophyll and decomposes when heated above 110 ℃. Can be used for pastry coloring, with a limit of 1g/kg. | |||||||||
