| Ascorbic acid glucoside, also known as VC glucoside, is a derivative of VC with a relative molecular weight of 33 and a melting point of 158.5 to 159.5 ℃. Its scientific name is O-a-D-glucopyranosyl-L-ascorbic acid (AA-2G). Due to the poor stability and susceptibility to oxidation of VC, a substitute product for VC, ascorbic acid glucoside, has been derived. It can replace VC as an acidifier, reducing agent, antioxidant, bleaching agent, and stabilizer, and is widely used in cosmetics, food, and medicine. | |||||||||
