Polyglycerol-3 polyricinolate (" PGPR ") is a food additive used to maintain high moisture content, stable content and as a viscosity regulator in emulsions of oil and water systems. In the chocolate industry, PGPR is used because it leads to a significant reduction in the yield stress of molten chocolate. This allows for chocolate molding without any bubbles, making it easier to coat the granular components, and the thickness of the chocolate coating can be optimally adjusted.
