| Polyglycerol-3 polyricinolate (" PGPR ") is a food additive used to maintain high moisture content, stable content and as a viscosity regulator in emulsions of oil and water systems. In the chocolate industry, PGPR is used because it leads to a significant reduction in the yield stress of molten chocolate.
